mormor honors Chef Molly Erika Kimball’s grandma Linda, their reason for pursuing food and hospitality and source of continuous inspiration. Mormor is a Scandinavian term for maternal grandmother <3 and represents the warmth, love, and light of a bustling kitchen and a pastry shared.

mormor pays homage to humble food traditions with a fine-dining sensibility refined through years of technique. Molly worked their way through some of the top restaurants and bakeries in Portland, OR before starting work on mormor in 2023. They continue to be inspired by food science, dietary-restriction accommodation, seasonal bounty, and their passion for art and design.

Ingredients matter

mormor sources ingredients from organic farms, the woods, local mills and purveyors wherever possible. The dual benefit of endeavouring to shorten the supply chain contributes directly to sustainability practices and elevates recipes with our fresh, nutrient-rich local bounty.

At times, it makes sense to substitute native Scandinavian cultivars with their PNW analogs, such as salmonberry for cloudberry, or huckleberry for blåbær.
